Meal: Chicken in Spicy and Sweet Onion Sauce

Ingredients

2 lbs small red-skinned potatoes

3 tbsp olive oil

4 chicken breasts

2 medium yellow onions, thinly sliced

2 tbsp fresh thyme, chopped

3 tbsp honey

3 garlic cloves, chopped

1/2 cup apple cider vinegar

1/2 cup heavy cream

3 tbsp unsalted butter

2 cups chicken broth

Directions

Potatoes:

1) Cut potates in half and place in pot, then cover with water.

2) Cover pot with lid and bring to boil.

3) Salt water and potatoes; cook uncovered at a boil until tender, 10-12 minutes.

4) Drain and return potatoes to hot pot to dry.

5) Add cream and butter to potatoes; smash to desired consistency; season with salt and pepper.

Chicken:

1) Preheat large skillet over medium-high heat.

2) Add 2 tbsp olive oil.

3) Season chicken with salt and pepper; add to skillet.

4) Brown chicken on both sides, 3 minutes per side.

5) Remove and reserve chicken, covered with foil to retain heat.

6) Add 1 tbsp olive oil, onions, tyme, honey, and garlic; season with salt and pepper.

7) Cook, stirring frequently, for 7-8 minutes or until onions are brown and carmelized.

8) Add cider vinegar and chicken broth.

9) Bring liquids to simmer.

10) Return chicken to skillet.

11) Cook at a simmer for 10 minutes, flipping chicken over halfway through.

12) Serve chicken and sauce over mashed potatoes.
