Meal: Chicken, Spring Green, and Yellow Bean Stir Fry

Ingredients
2 tbsp sunflower oil
1 lb skinless, boneless chicken breasts
2 cloves garlic, finely chopped
1 green bell pepper, thinly sliced
1 1/2 cups snow peas
6 scallions, sliced
8 oz spring greens or cabbage, shredded
5 3/4 oz jar yellow bean sauce
Directions
1. Heat sunflower oil in a large preheated wok
2. Slice chicken into thin strips.
3. Add chicken and garlic to the wok and stir fry for about 5 minutes or until the chicken is sealed on all sides and beginning to turn golden.
4. Add the snow peas, scallions, green bell pepper strips, and spring greens to the wok and stir fry for a further 5 minutes or until the vegetables are just tender.
5. Stir in the yellow bean sauce and heat through for about 2 minutes or until the mixture starts to bubble.
