Meal: Almond Crusted Chicken with Spinach

Ingredients

4 Skinless, Boneless Chicken Breasts- flattened to 1/3 inch thick

1 egg, lightly beaten

2 tbsp buttermilk

1/2 cup finely chopped almonds

1/2 cup panko bread crumbs

2 tsp fresh rosemary

1/2 tsp salt

1 tbsp peanut or canola oil

2 tbsp sliced shallot

8 cups fresh spinach leaves

Directions

1. In a shallow dish, combine egg and buttermilk

2. In a gallon bag, combine almonds, panic crumbs, rosemary and 1/4 tsp salt

3. Dip chicken in egg mixture and then coat in almond mixture

4. Heat oil in a nonstick skillet over medium heat

5. Add chicken (half at a time if necessary) and cook 4-6 minutes or until no longer pink, flipping once

6. Remove chicken and keep warm

7. Reserve oil and drippings.

8. Cook Shallot 3-5 minutes or until just tender, stirring frequently

9. Add spinach and 1/4 tsp salt.

10. Cook and toss about 1 minute or until just wilted

11. Serve chicken with spinach
