Meal: Bucatini with Sausage, Peppers, and Onions

Ingredients

1/2 lb bucatini pasta

1 TBSP EVOO

1 lb bulk sweet Italian turkey sausage

1 lb bulk mild Italian turkey sausage

4 garlic cloves, chopped

1 large yellow onion, chopped

1 red bell pepper, cored, seeded, quartered, and thinly sliced

2 cubanelle peppers, seeded and thinly sliced

1/3 cup grated parmigiano-reggiano

1/4 cup fresh flat-leafed parsley, chopped

1 cup fresh basil leaves, torn or shredded

Directions

1. Bring pot of water to boil and cook the bucatini

2. Heat a very large, deep skillet over medium-high heat

3. Add the EVOO and all of the sausage. Brown and crumble the sausage.

4. Remove from the pan to a plate with a paper towel and reserve

5. Remove all but 3 TBSP oil and add the garlic, onions and peppers, cooking about 6-7 minutes until tender

6. Add the sausage back and combine. Season with a little salt

7. Drain the pasta and add to the pan.

8. Stir in the cheese, parsley, and basil
