Meal: Chicken Manicotti with Chive-Cream Sauce

Ingredients

12 packaged manicotti shells

16 oz cream cheese with chives and onion

1 1/3 cup milk

1/2 cup grated Romano or Parmesan cheese

2 cups chopped cooked chicken (10 oz)

1 10 oz package frozen chopped broccoli, thawed and drained

7 oz roasted red peppers, drained and chopped

1/4 tsp black pepper

paprika to top

Directions

1. Cook manicotti shells according to package directions; drain and rinse

2. Melt cream cheese in a saucepan over medium-low heat, stirring continuously

3. Slowly add milk, stirring until smooth

4. Stir in cheese and allow to melt; remove from heat

5. In a medium mixing bowl, stir together 3/4 of sauce, chicken, broccoli, roasted red peppers, and black pepper.

6. Using a small spoon, fill each manicotti shell with about 1/3 cup of filling

7. Arrange filled shells in a rectangular baking dish.

8. Pour remaining sauce over shells; sprinkle with paprika

9. Cover with foil and bake at 350 for 25-30 minutes or until heated through.
