Side Dish: Zucchini Bread

Ingredients
1.25 cups flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp ground cinnamon
3/4 cup brown sugar
2 large eggs, beaten
1/2 cup vegetable oil
1 tsp vanilla
1/2 tsp salt
2 cups grated zucchini, squeezed of excess moisture
1.5 cups pecans or walnuts
Directions
1. Preheat oven to 350 and grease a 9x5 loaf pan
2. Whisk together flour, baking soda, powder, and cinnamon
3. Blend together sugar, eggs, oil, vanilla, and salt
4. Stir the dry ingredients into the wet
5. Add the zucchini and nuts; mix with a few strokes
6. Scrape into greased pan and bake until bread pulls away from the sides of the pans (about 45 minutes)
7. Cool for 10 minutes in pan on rack then cool completely out of pan
