Meal: Sweet and Sour Island Stew

Ingredients
1 1/2 lb chicken tenders, halved
1 tbsp vegetable oil
1 cup onion, sliced
1 cup green pepper, sliced
1 cup red pepper, sliced
2 tsp minced garlic
2 tsp ginger root
3 cup chicken broth
1 can (20oz) pineapple chunks, unsweetened
2 tbsp light brown sugar
2 tbsp apple cider vinegar
2 tsp curry powder
2 tbsp cornstarch
salt and pepper to taste
Directions
1. Drain pineapple chunks and reserve juice.
2. Cook chicken in oil in large skillet over medium heat until browned, about 8 minutes; then remove and reserve.
3. Add onion, peppers, garlic, and ginger to skillet; sauce until tender, about 5 minutes.
4. Stir in chicken and remaining ingredients, except pineapple juice and cornstarch.
5. Heat to boiling.
6. Combine cornstarch and reserved pineapple juice in a small bowl.
7. Add combined juice and cornstarch into skillet and stir until thickened, about 1 minute.
8. Season to taste with salt and pepper.
