Meal: Sausage, Potato, and Bell Pepper Stew

Ingredients

1 red pepper, thinly sliced

1 green pepper, thinly sliced

1 yellow pepper, thinly sliced

1 medium onion, thinly sliced

8 oz turkey sausage, sliced

1 tbsp flour

5 cup red potatoes, thinly sliced

1/2 cup roasted red peppers

3/4 cup chicken broth

1 tsp dried thyme

1 tsp dried marjoram

salt and pepper to taste

Directions

1. Cook peppers, onion, and sausage in a large skillet over medium heat until sausage is browned, about 8 minutes.

2. Sprinkle with flour; cook 1 minute.

3. Add remaining ingredients, except salt and pepper, and heat to boiling.

4. Reduce heat; simmer, covered, until vegetables are tender, about 15 minutes.

5. Season to taste with salt and pepper.
