Slow Cooker: French Onion Soup

Ingredients

6 onions, halved and sliced 1/4 inch thick

4 tbsp unsulted butter, melted

1 tbsp brown sugar

1 tsp minced fresh thyme or 1/4 tsp dried thyme

5 tbsp flour

3/4 cup apple butter

3/4 cup sherry

1/4 cup soy sauce

2 cups chicken broth

2 cups turkey broth

2 cups gruyere cheese

Directions

1. Add onions, butter, 1 tsp salt, sugar, and thyme to slow cooker.

2. Whisk together flour, apple butter, sherry, and soy sauce and add to slow cooker

3. Cover and cook until onions are softened and deep golden brown (8-12 hours on high). Onions burn quickly so start checking on them at 8 hours.

4. Bring broths to a boil in covered saucepan on high heat, then stir into slow cooker.

5. Let soup sit until heated through, about 5 minutes.
