Slow Cooker: Slow Cooker: Creamy Butternut Squash and Apple Soup

Ingredients
1/2 onion, chopped fine
2 TBSP butter
salt and pepper
1 lb butternut squash, peeled, seeded, and cut into 1 inch pieces
1 golden delicious apple, peeled, cored, and chopped
2 cups chicken broth
1 apple and cheese for grilled cheese side
Directions
1. Microwave onion, butter, and 1/4 tsp salt in bowl stirring occasionally until onion is softened (about 5 minutes)
2. Transfer to slow cooker and stir in squash, apple, and broth
3. Cover and cook on low 6-7 (or high 4-5 hours) hours until squash is tender
4. Process soup in blender until smooth (1-2 minutes), serve warm
Notes
Needs flavor - ginger. Nutmeg?
