Slow Cooker: Slow-Cooker: Hearty Turkey Stew

Ingredients

1 onion, chopped fine

3 garlic cloves, minced

1 TBSP EVOO

1 tsp minced fresh thyme or 1/4 tsp dried thyme

1/8 tsp red pepper flakes

1 lb butternut squash, peeled, seeded, and cut into 1/2 inch pieces (3 cups)

2 cups chicken broth

2 tsp instant tapioca

1 bay leaf

1 lb bone in turkey thighs, skin removed and trimmed

2 ounces (2 cups) baby spinach

1/4 cup parmesan cheese

Directions

1. microwave onion, garlic, oil, thyme, and pepper flakes in bowl, stirring occasionally until onion is softened (about 5 minutes) then transfer to slow cooker.

2. stir in squash, broth, tapioca, and bay leaf

3. Season turkey with salt and pepper and nestle into slow cooker

4. Cover and cook until turkey is tender, 6-7 hours on low

5. transfer turkey to cutting board, let cool slightly, then pull apart into large chunks using 2 spoons, discard bones

6. Discard bay leaf and stir turkey into stew.

7. Stir in spinach, 1 handful at a time and let sit until wilted (about 5 minutes)

8. Adjust consistency with additional hot broth as necessary and stir in Parmesan cheese
