Subrecipe: KAF Tender Tart Dough

Ingredients

113 grams (1/2 cup) unsalted butter, room temperature

50 grams (1/4 cup) sugar

1/2 tsp vanilla extract

1/8 tsp salt

1 egg yolk

150 grams (1/25 cups) all-purpose flour

Directions

1. Line 2 6" tart pants with parchment paper and spray with pan spray

2. In mixer, mix butter, sugar, salt, and vanilla on medium speed until smooth

3. Add the egg yolk, mixing to combine.

4. Stir in the flour just until combined and a soft dough forms

5. Turn the dough out onto a well-floured work surface, form into a ball, and divide into 2 pieces.

6. Roll out into circle 1/8" thick and about 8" wide and transfer to pan. Push into corners and edges, then trim excess

7. dock the dough with a fork

8. Chill the dough for 30 minutes and preheat oven to 375

9. Line with paper and weigh the curst with pie weights

10. Bake for 15-18 minutes until crust is set but not taking on much color

11. Remove from oven and remove weights

12. return to the over and make 10-12 minutes until golden brown and baked through.

13. Cool, then fill as directed

Notes

make 2 6" tarts or 1 9" tart or 4 4" tarts
