Meal: Chicken, Spinach, and Herb Burgers

Ingredients

1 10oz box frozen chopped spinach, defrosted

2 lbs ground chicken breast

1 shallot, finely chopped

2 tbsp dijon mustard

10 leaves fresh basil, shredded

3 tbsp chopped parsley

salt and pepper to taste

2 tbsp olive oil

2 garlic cloves, chopped

4 slices swiss cheese

4 kaiser rolls, split and toasted

Directions

1. Preheat a large skillet over medium-high heat.

2. Squeeze excess liquid from spinach with a kitchen towel.

3. Combine spinach, chicken, shallots, mustard, basil, parsley, salt, and pepper in a mixing bowl; mix well.

4. Divide mixture into 4 equal portions and make 4 large patties, 3/4 to 1" thick.

5. Drizzle patties with oil and plache them in the hot skillet.

6. Cook 6-7 minutes each side or until chicken is cooked through.

7. Top burgers with swiss cheese.

8. Cover skillet loosely with foil; turn off heat and allow cheese to melt, about 2 minutes.

9. Serve on rolls with additional mustar and other toppings as desired.
