Main Dish: Asian Hoisin Sloppy Joes

Ingredients
1 lb ground turkey
6 oz carrots, peeled and grated
2 Persian cucumbers, sliced into thin half-moons
1 lime, zested and halved
2 cloves garlic
potato buns
6 tbsp soy sauce
6 tbsp hoisin sauce
Directions
1. Combine carrots, cucumbers, lime zest, juice from 1 lime, and 1 tsp of sugar. Set aside to quick pickle.
2. Combine Hoisin and soy sauce (and 1/4 cup ketchup - optional) and 1/4 cup water
3. Heat a drizzle of oil in a large pan over medium-high heat. Add turkey and cook until browned and cooked through.
4. Add garlic and cook until fragrant and season with salt.
5. Stir hoisin mixture into pan with turkey and simmer until sauce has thickened. Toast buns in oven.
6. Turn off heat and stir in 1 TBSP butter. Serve on buns with pickled slaw.
