Meal: Cornbread Turkey Casserole

Ingredients
2 cups frozen mixed vegetables (or frozen corn)
1 lb ground turkey
1 medium onion, chopped
1 cup chicken broth
2 tbsp flour
1 tsp chili powder
1/4 tsp salt
1/8 tsp pepper
Cornbread Topping:
1/2 cup yellow cornmeal
1/2 cup flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
2 tbsp canola oil
1 egg
1/2 cup milk
Directions
1. Preheat oven to 350.
2. Cook frozen veggies as normal; drain remaining liquid and set aside.
3. Brown meat and onion in large skillet.
4. Combine flour and broth in covered container and shake will to mix without lumps.
5. Add chili powder, pepper, salt, and flour and broth to skillet.
6. Bring to boil, stirring constantly until thickened.
7. Add cooked veggies and mix well.
8. Pour into 8"x8" pan.
9. In medium bowl, combine dry cornbread topping ingredients.
10. Add liquid cornbread topping ingredients; mix just until blended.
11. Spread over contents of 8x8 pan.
12. Bake uncovered 30-35 minutes or until cornbread is golden brown.
