Main Dish: Curry Coconut Chicken with Honey Mustard

Ingredients

1/2 cup milk

1 egg, beaten

2 cups shredded coconut

2 tsp burry powder

2 lbs chicken tenderloins

1/2 cup honey

1/2 cup Dijon mustard

Directions

1. Preheat oven to 375 F

2. Grease large cookie sheet

3. Mix milk and eggs in a bowl.

4. Mix coconut and curry powder in a shallow dish.

5. Dip chicken into milk mixture, then coat with coconut mixture; place on cookie sheet.

6. Bake uncovered 10 minutes; turn chicken.

7. Bake uncovered 5-8 minutes more or until chicken is done.

8. Mix honey and mustard; serve with chicken.
