Meal: Garlic Soy Chicken

Ingredients
2 chicken breasts, halved
1/4 cup soy sauce
1/4 cup chicken broth
2 tbsp packed borwn sugar
1 tbsp grated ginger root
2 cloves garlic, finely chopped
1 bag stir fry vegetables
hot cooked rice
Directions
1. Flatten each chicken breast half to 1/4 inch thickness.
2. Place chicken in shallow glass or plastic dish.
3. Mix soy sauce, broth, brown sugar, ginger root and garlic; pour over chicken.
4. Cover and let stand 20 minutes.
5. Remove chicken from marinade.
6. Heat marinade in skillet over medium-high heat until hot.
7. Cook chicken in marinade 15-20 minutes, turning once, until done.
8. Stir in vegetables. Cook 2-4 minutes, stirring frequently, until vegetable sare tender.
9. Serve over rice.
