Meal: Grilled Turkey Cutlets with Warm Cranberry Salsa

Ingredients

1/2 tbsp vegetable oil

1 medium sweet potato

salt

pepper

1/2 large red onion, finely chopped

1 jalapeno pepper, seeded and minced (optional)

1/8 cup cranberry juice

1/4 cup dried cranberries

1/2 cup chicken stock

1 tbsp honey

1 lb turkey breast cutlets

1 tsp poultry seasoning

1 lime

1 tbsp cilantro leaves

1 1/2 tbsp butter

1/8 cup parsley leaves

Directions

1. Preheat grill on high.

2. Cook and mash sweet potatoes (to be finished with remaining steps)

3. Preheat small sauce pot over medium-high heat with vegetable oil.

4. Add red onions, jalapenos, salt, and pepper; cook for 2 minutes.

5. Add cranberry juice, chicken stock, and honey.

6. Bring mixture to simmer; reduce heat to low and simmer 5 minutes or until liquids are reduced by half.

7. Season cutlets with salt, pepper and poultry seasoning. Drizzle cutlets with vegetable oil and add cutlets to grill.

8. Grill cutlets for 5 minutes each side or until turkey is cooked through (1-2 minutes for thin on george foreman grill).

9. Remove cranberry salsa from heat.

10. Add juice of lime, and the cilantro, and stir to combine.

11. Pour salsa over turkey and serve with mashed potatoes.
