Meal: Honey Chicken Stir Fry

Ingredients
olive oil, for cooking (about 4 tbsp)
1 lb chicken breasts, cut into cubes
1 egg white, lightly beaten
1/2 cup cornstarch
2 onions, thinly sliced
1 green pepper, sliced
2 carrots, cut into matchsticks
3.5 oz snow peas, ends sliced off
1/3 cup honey
2 cups rice noodles
2 tbsp roasted almonds (optional)
Directions
1. Cook and drain rice noodles according to package directions.
2. Dip chicken cubes in egg white, then coat with cornstarch.
3. Heat wok on high.
4. Add 2 tbsp oil; swirl to coat sides of wok.
5. Add half the chicken to the wok.
6. Stir-fry chicken for 4-5 minutes until golden brown and just cooked through.
7. Remove chicken to platter and reserve; repeat for remaining half of chicken.
8. Remove remaing chicken from wok to a platter and reserve.
9. Reheat the wok, adding 2 tbsp oil.
10. Add onion to wok; stir-fry for 3-4 minutes or until slightly softened.
11. Add pepper and carrot; stir-fry for 3-4 minutes or until tender.
12. Add snow peas; stir-fry for 2 minutes.
13. Add honey to wok.
14. Toss vegetables until well coated with honey.
15. Return chicken to wok; toss until heated through and well coated with honey.
16. Season with salt and pepper to taste.
17. Serve over rice noodles; sprinkle with almonds if desired.
