Meal: Italian Sausage Stuffed Chicken Breasts

Ingredients
4 oz bulk Italian sausage
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped yellow onion
1/2 tsp dried basil
2 tbsp plain dry bread crumbs
2 boneless chicken breasts, flattened to 1/4 in
2 slices provolone cheese
Directions
1. Preheat oven to 350 F
2. Coat medium nonstick skillet with cooking spray; heat over medium heat.
3. Add sausage; brown for 3 minutes, stirring to break up meat.
4. Add bell peppers, onion, and basil.
5. Cook and stir 2 minutes.
6. Remove from heat; allow to cool.
7. Stir in bread crumbs.
8. Line baking pan with foil.
9. Place chicken breasts on pan.
10. Spoon sausage mixture in center of chicken.
11. Roll up chicken around filling; place seam-side down and secure with toothpicks if necessary.
12. Bake 20 minutes or until chicken is cooked through.
13. Top with provolone cheese; bake 5 minutes or until cheese melts.
