Meal: Paella

Ingredients

2 cups chicken broth

1 1/4 cup long grain rice (uncooked)

1/2 cup chopped onion

2 garlic cloves, minced, divided

1/2 tsp salt

1/4 tsp ground turmeric

1/8 tsp pepper

1 bay leaf

1 small green pepper, julienned

1 1/2 green onion, sliced

1/2 tsp minced parsley

1/2 tsp thyme

1/8 tsp hot pepper sauce

1 tbsp olive oil

1 cup frozen peas

2 boneless chicken breasts, thinly sliced

1/4 lb medium shrimp, peeled and deveined

1 tbsp lemon juice

Directions

1. In saucepan, combine broth, rice, onion, 1 garlic clove, salt, turmeric, pepper, and bay leaf; bring to boil.

2. Reduce heat; cover and simmer 20 minutes or until rice is tender.

3. In large skillet, saute green pepper, oinions, parsley, thyme, hot pepper sauce and remaining garlic in oil until green pepper is crisp-tender.

4. Add peas; heat through.

5. Discard bay leaf.

6. Add rice mixture to skillet and keep warm.

7. In a separate skillet, cook and stir shrimp in lemon juice for 2 minutes.

8. Add chicken; cook until chicken is done and shrimp has turned pink.

9. Add chicken and shrimp to rice mixture; toss.
