Meal: Pasta with Chicken and Pepper Cheese Sauce

Ingredients

1 lb dried spaghetti or fettuccine

3 chicken breasts, cut into 1" pieces

3 tbsp flour, divided

1/2 tsp salt

1/4 tsp ground red pepper

1/4 tsp ground white pepper

1/4 tsp ground black pepper

1 tbsp olive oil

1 medium red or green pepper, chopped

1 medium onion, chopped

1 jalapeno pepper, seeded and chopped

2 cloves garlic, minced

3/4 cup chicken broth

1/2 cup milk

1 tsp Worcestershire sauce

1 cup shredded Monterey Jack cheese

1/4 cup sour cream

Directions

1. Cook pasta according to package directions; drain and keep warm.

2. In a small mixing bowl, combine 1 tbsp flour, salt, red, white and black pepper.

3. Toss flour mixture with chicken to coat; set aside.

4. Heat oil over medium-high heat in a large skillet.

5. Add red or green pepper, onion, chopped jalapeno pepper, and garlic to skillet; cook and stir until vegetables are tender.

6. Remove vegetables with slotted spoon; set aside.

7. Add chicken to skillet, adding additional oil if necessary.

8. Cook and stir 3-4 minutes or until chicken is cooked.

9. Remove chicken from skillet and reserve.

10. Stir 2 tbsp flour into drippings in skillet.

11. Add chicken broth, milk, and Worcestershire sauce to skillet; cook and stir until thickened and bubbly.

12. Add cheese, stirring until cheese melts.

13. Stir 1 cup of mixture into sour cream; return all of sour cream mixture to skillet.

14. Reduce heat; stir in chicken and vegetables and cook until heated through but do not allow to boil.

15. Serve chicken, vegetable, and sauce mixture over pasta.
