Meal: Salmon with Ginger Pineapple Salsa

Ingredients
20z crushed pineapple
3 green onions, chopped
1 jalapeno pepper, seeded and chopped
2 tbsp cider vinegar
2 garlic cloves, minced
1 1/2 tsp sesame oil
1 tbsp honey
1 1/2 tsp minced gingerroot
1/2 tsp curshed red pepper
1/4 tsp salt
1/2 tsp salt
4 salmon filets
3/4 tsp ground cumin
1/4 tsp pepper
Directions
1) Drain pineapple, reserving 1/4 cup juice
2) In a large bowl, combine: pineapple (with reserved juice), green onions, jalapeno, vinegar, garlic, sesame oil, honey, ginger, red pepper, and 1/4 tsp salt. Mix well.
3) Sprinkle salmo with cumin, pepper, and 1/2 tsp salt.
4) Place skin-side down in a greased baking dish.
5) Pour pineapple mixture over salmon.
6) Bake, uncovered, at 350 for 20 minutes or until fish is done.
