Meal: Sausage and Spinach Pastry Squares

Ingredients
2 tbsp olive oil
1 lb bulk sweet italian sausage
1 small yellow onion, finely chopped
6 leaves sage, chopped
salt and pepper to taste
2 sheets frozen puff pastry, defrosted
4 tbsps Dijon or spicy brown mustard
1 10oz box frozen chopped spinache, defrosted
zest of 1 lemon
1 cup grated Parmigiano cheese
2 tbsp red wine vinegar
Directions
1. Preheat oven to 400 F
2. Heat oil in medium skillet over high heat.
3. Add sausage, breaking it up with spoon.
4. Add onions, sage, salt, and pepper.
5. Cook, stirring occasionally, until sausage is browned, 4-5 minutes.
6. Remove skillet from heat; drain any excess fat.
7. Cut each of 2 sheets of puff pastry into 2 equal rectangles.
8. Brush top of each pastry with mustard.
9. Using a kitchen towel, wring out defrosted spinach to remove excess liquid.
10. Place spinach in a large mixing bowl; add lemon zest, parmigiano cheese, salt and pepper.
11. Add sausage mixture to spinach and mix well.
12. Arrange pastry rectangles on a cookie sheet.
13. Place a quarter of the filling mixture on the bottom half of each pastry.
14. Fold top half of each pastry over filling; crimp edges with fork.
15. Cut two inch-long slits in the top of each packet.
16. Bake for 12-15 minutes, or until pastry is golden brown.
