Main Dish: Sauteed Breaded Chicken Breasts

Ingredients

2 chicken breasts, halved

1/2 cup dry bread crumbs

1/8 cup grated parmesan cheese

(1/2 tbsp minced parsley or basil)

(1/2 tsp dried rosemary, thyme, or oregano, crumbled)

1/2 tsp salt

1/4 tsp pepper

1 large egg

1 tsp water

1/8 cup flour

1/4 cup olive oil

Directions

1. Flatten each chicken breast to 1/4 inch.

2. Combine bread crumbs, cheese, and spices in a shallow bowl.

3. Whisk egg and water together in a shallow bowl.

4. Spread flour on a plate.

5. For each chicken breast, coat in flour, then dip in egg mixture, and finally coat in bread crumb mixture; set aside on a plate.

6. Heat olive oil in a skillet over medium-high heat.

7. Add chicken to skillet and cook until lightly browned, 2-3 minutes per side.

8. Drain on paper towels; serve.
