Meal: Seafood Dijon Fettucini

Ingredients

1/4 cup light mayonnaise

1/4 cup nonfat plain yogurt

2 tsp Dijon mustard

2 tsp dried parsley

8 oz egg noodles (about 6 cups dry)

1 red bell pepper, chopped

2 tsp chopped garlic

1 lb peeled and deveined shrimp

Directions

1. Mix mayonnaise, yogurt, mustard and parsley to make sauce; set aside.

2. Cook noodles according to package directions. Drain and set aside.

3. Spray skillet with nonstick cooking spray and stir fry pepper and garlic until done; remove from skillet and keep warm.

4. Add 1 tbsp water to the skillet. Add seafood and cook until done; add more water as necessary to prevent sticking.

5. Regurn vegetables to skillet.

6. Pour sauce over all and cook on low until heated.

7. Add noodles; toss to coat all with sauce.
