Meal: Smoked Turkey Shepherd's Pie

Ingredients

coarse salt

3 large potatoes, peeled and cubed

2 tbsp olive oil

1/4 pound turkey bacon, chopped

1 lb ground turkey

1 tbsp smoked paprika

coarse black pepper

2 tbsp fresh thyme leaves

1 medium onion, chopped

2 carrots, diced

3 celery ribs, chopped

1 red bell pepper, chopped

2 cups frozen peas

2 tbsp flour

2 cups chicken broth

1 cup sour cream

1 large egg, beaton

3 tbsp butter

10-12 fresh chives, chopped

Directions

1. Bring medium pot of water to boil.

2. Salt water; add potatoes and cook until tender, about 10-12 minutes.

3. In a deep, large skillet, heat olive oil over medium-high heat.

4. Add bacon; brown.

5. Drain excess fat.

6. Add turkey to pan and break up with wooden spoon.

7. Season turkey with paprika, salt, pepper and thyme.

8. When turkey is browned, add onions, carrots and celery; season with salt and pepper.

9. Cook 5 minutes, stirring occasionally.

10. Add bell peppers and peas; cook for 2 minutes.

11. Add chicken stock and combine.

12. Stir in 1/2 cup sour cream and simmer over low heat.

13. Preheat broiler to high.

14. When potatoes are tender, stir a ladle of the cooking water into the whisked egg.

15. Drain potatoes; return to warm pot and allow to dry somewhat.

16. Add 1/2 cup sour cream, butter, salt and pepper to potatoes; mash, adding the egg mixture as you mash.

17. Pour turkey mixture into a medium casserole dish.

18. Top with mashed potatoes spread evenly across.

19. Place casserole 5 inches from broiler; broil until potatoes are golden at the edges.

20. Garnish casserole with chives and sprinkle of paprika.
