Meal: Spinach and Goat Cheese Chicken Rolls

Ingredients
4 chicken breasts
1 10oz box frozen chopped spinach, defrosted
1/2 cup crumbled goat cheese (optionally with herbs)
zest and juice of 1 lemon
3 tbsp sesame seeds
3 tbsp flour
4 tbsp olive oil
3 garlic cloves
1 small yellow onion, finely chopped
1 tbsp thyme
1/2 tsp red pepper flakes
2 cups chicken stock
1/4 cup parsley, chopped
3 tbsp diced roasted red peppers
Directions
1. Preheat oven to 325 F
2. Flatten each chicken breast to 1/8" - 1/4" thickness.
3. Wring spinach dry in a kitchen towl; separate and add to a bowl.
4. Add goat cheese and lemon zest and season as desired with salt and pepper; mix well.
5. Lay out flattened breasts and season with salt and pepper.
6. Place one quarter of the cheese and spinach mixture in the along one edge of each breast.
7. Roll each breast to create a cylinder; secure with toothpicks.
8. Season outside of chicken with salt and pepper.
9. Mix flour and sesame seeds in a medium bowl suitable for dredging.
10. Dredge each chicken roll in flour and sesame seed mixture.
11. Preheat a large skillet over medium-high heat with 2 tbsp olive oil.
12. Add chicken to skillet; saute on all sides for 5 minutes or until golden brown all over.
13. Transfer rolls to a cookie sheet and place in oven to finish cooking, 5-7 minutes.
