Main Dish: Stuffed Cornish Hens

Ingredients
1/4 loaf white bread
1 egg
1/2 cup milk
1/4 cup chopped onion
1/4 tsp salt
1/4 tsp pepper
1/4 tsp thyme
1/4 tsp sage
1/4 tsp poultry seasoning
2 cornish game hens
Directions
1. Toast bread on 150 for 3 minutes.
2. Shred bread into a large bowl.
3. Add egg, milk and onion; mix until bread is moist but not soggy.
4. Add seasonings; mix by hand.
5. Add additional seasonings to taste; add milk as required to ensure that bread stays wet.
6. Stuff hens with stuffing mix; close with skewer.
7. Rub outside of hens with olive oil; place on wire rack in a backing pan.
8. Bake at 350 for 90 minutes; basting occasionally while cooking.
