Meal: Super Mashers with Shrimp

Ingredients
4 large potatoes
3 tbsp vegetable oil
2 tbsp butter, cut into small pieces
4 garlic cloves, chopped
4 scallions, chopped
1 lb medium shrimp, peeled and deveined
1/2 lb chorizo, diced
1 red bell pepper, thinly sliced
1 chili, thinly sliced
1 medium red onion, thinly sliced
2 tbsp thyme leaves, chopped
hot sauce to taste
juice of 2 limes
1/2 cup sour cream
1/4 to 1/2 cup milk, to taste for mashers
Directions
1. Peel potatoes and cut into small chunks.
2. Place in a pot; cover with cold water.
3. Cover; bring to boil over high heat.
4. Uncover; add salt to season and cook until tender, about 15 minutes.
5. Bring 1 tbsp vegetable oil to a small pot; heat over medium-low heat.
6. Add butter; allow to melt into oil.
7. Add garlic; saute 1-2 minutes.
8. Mix in scallions; remove from heat and reserve.
9. Heat large skillet over high heat.
10. Add chorizo to pan; cook for 1-2 minutes.
11. Add shrimp; cook 2 minutes.
12. Move sausage and shrimp to one side of pan; add remaining tbsp vegetable oil to pan.
13. Add peppers, chili, and onions to pan; season with salt and pepper.
14. Toss veggies, searing edges, for 1-2 minutes; combine veggies and meat.
15. Add thyme; cook 2-3 minutes, stirring constantly.
16. Turn off heat; drizzle with lime juice and hot sauce.
17. Drain potatoes; return to hot pot to dry.
18. Add sour cream and reserved garlic and scallions to potatoes; mash.
19. Mix in milk as needed while mashing potatoes.
20. Serve shrimp and veggies over mashed potatoes.
