Main Dish: Sweet Sausages Braised in Onions

Ingredients

2 lbs small red potatoes

salt, pepper

1 tbsp olive oil

8 links (2lbs) sweet italian sausage

2 medium yellow onions, thinly sliced

2-3 tbsp chopped fresh thyme (5-6 sprigs)

3 garlic cloves, chopped

1/4 cup balsamic vinegar

2 cups chicken stock

2 tbsp honey

2 tbsp butter

1/3 cup sour cream

1/4 cup milk

Directions

Mashed potatoes:

1. Place potates in a pot and cover with water; bring to boil.

2. Salt water; boil the potates until tender, 10-12 minutes.

3. Drain potates and return them to the pot to dry.

4. Add butter, sour cream, and milk and smash to desired consistency.

5. Season with salt and pepper to taste.

Sausage:

1. Heat a large skillet over medium-high heat with the olive oil.

2. Add sausage links and brown on all sides, about 4 minutes.

3. Remove sauasage links and keep warm.

4. Add onions, thyme, and garlic to the skillet; season with salt and pepper.

5. Cook onions, stirring frequently, until they begin to brown; about 5 minutes.

6. Bring liquid to a simmer, then add browned sausages back to pan.

7. Braise sausages until cooked through and liquid has been reduced by half; 8-10 minutes.

8. Serve sausages and liquid over mashed potatoes.
