Meal: Tagliatelle with Chicken and Cream

Ingredients

1 onion, finely chopped

2 chicken breasts, chopped into small pieces

2 tbsp olive oil

1 garlic clove, crushed

1 cup heavy cream

1 tbsp snipped chives

1 tsp wholegrain mustard

2 eggs, beaten

13 oz tagliatelle pasta

parmesan cheese, to serve

snipped chives, to serve

Directions

1. Cook tagliatelle to package directions until al dente.

2. Heat olive oil in a large frying pan over low heat.

3. Add onion and garlic; stir until onion is tender.

4. Add chicken and increase heat to medium; cook gently until cooked through.

5. Remove from heat; stir in cream, chives, mustard, and salt and pepper to taste.

6. Return to heat; bring to boil.

7. Add egg; stir quickly to combine and remove from heat.

8. Combine pasta and sauce; serve with grated parmesan cheese.
