Meal: Ceasar Chicken with Orzo

Ingredients

1 tbsp vegetable oil

4 chicken breasts

1 can (14.5 oz) ready-to-serve chicken broth

1 cup water

1 cup orzo (rosa marina)

1 bag frozen vegetables (broccoli, green beans, pearl onions, red peppers)

3 tbsp ceasar dressing

1/8 tsp ground pepper

Directions

1. Heat oil in a 10-inch skillet over medium-high heat.

2. Cook chicken in oil about 10 minutes, turning once, until brown.

3. Remove chicken from skillet, keep warm.

4. Add broth and water to skillet; heat to boiling.

5. Stir in pasta; heat to boiling.

6. Stir in frozen vegetables and dressing.

7. Add chicken; sprinkle with pepper.

8. Heat to boiling.

9. Reduce heat; simmer uncovered about 5 minutes or until vegetables are crisp-tender and chicken juice is no longer pink when centers are cut.
