Meal: Turkey Noodle Casserole

Ingredients

1/2 lb extra wide egg noodles

1 tbsp olive oil

3 slices turkey bacon, chopped

1 package ground turkey breast

1 medium onion, chopped

2 tsp ground thyme or poultry seasoning

1/2 cup dry white wine

1 cup chicken stock

1/2 cup heavy cream

1/4 tsp nutmeg

2 tbsp unsalted butter

2 cup grated gruyer cheese

1 cup bread crumbs

2-3 tablespoons chopped fresh parsely

Directions

1. Bring large pot of water to boil

2. Salt water, cook the noodles al dente

3. Drain well, return to pot.

4. Preheat large skillet over medium-high heat

5. Add oil and bacon, cook 2-3 minutes, until bacon begins to brown at edge

6. Add ground turkey and brown it

7. Move meat to one side of pan; add onion to other side

8. Cook 3-5 minutes

9. Stir together meat and onion

10. Season with salt and pepper and thyme/poultry seasoning

11. Cook 5 minutes

12. Add wine and stir to deglaze pan

13. Stir in chicken stock; bring to bubble

14. Stir in cream; reduce heat to low

15. Add nutmeg and stir

16. Preheat broiler to high

17. Combine noodle with turkey and sauce

18. Grease casserole dish with butter

19. Transfer turkey/noodle mixture to dish

20. Top with cheese

21. Top with bread crumbs

22. Place dish 8-10" from broiler and brown for 2-3 minutes.
