Side Dish: Asparagus with Orange and Hazelnuts

Ingredients

1 lb asaragus, rinsed and bottoms snapped off

2 tbsp butter

1/4 cup hazelnuts, chopped

1 1/2 tbsp orange zest

juice of 1/2 orange

1 tsp salt

Directions

1. Place nuts in a dry skillet over medium heat.

2. Cook, stirring constantly to prevent burning, about 4 minutes or until lightly toasted.

3. In a pot large enough for the asparagus, bring water to a roiling boil.

4. Add salt to water; drop in asparagus.

5. Boil 5-7 minutes or until asparagus is done.

6. In a large skillet, combine butter, toasted nuts, orange zest and juice.

7. Cook over medium heat until butter is melted and slightly browned.

8. Add asparagus to skillet; toss and heat through.

9. Season with salt and pepper to taste; serve.
