Side Dish: Scalloped Potatoes

Ingredients
3 cups thinly sliced potatoes
salt
2 tbsp flour
1 tbsp butter
1/4 cup finely-chopped chives
1/4 cup finely-chopped onions
3 slices turkey bacon, cooked to crispness and crumbled
1 1/4 cup milk
1 1/4 cup salt
1/4 tsp paprika
1/4 tsp dry mustard
Directions
1. Bring water to boil in a medium pot, sufficient to cover the the potatoes.
2. When water is boiling, add potatoes; parboil about 8 minutes or until softened but not mushy.
3. Grease a 10" round baking dish.
4. Mix chives, onions, and bacon in a small bowl.
5. In a small saucepan, heat milk, salt, paprika and mustard over low heat.
6. Place potatoes in dish in three layers. After each layer of potatoes, dust the layer with flour and sprinkle with melted butter. Spread the onions, chives, and bacon between the layers (with potatoes on top and bottom in the dish).
7. Bake, about 35-40 minutes or until lightly golden on top, at 350.
