Meal: Chocolate Waffles with Fresh Raspberry Sauce

Ingredients

1 1/2 cups flour

1 tbsp baking powder

1/4 tsp salt

1/3 cup melted semisweet chocolate

2 egg yolks

2 egg whites

1 tsp vanilla extract

1 3/4 cup milk

1/2 cup melted butter

5 tbsp melted butter

1/2 cup sugar

2 pints fresh raspberry

2 cups sweetened whipped cream

dash of Grand Marnier or other orange liquer

Directions

Waffles:

1. Combine flour, baking powder, and salt in mixing bowl.

2. In a secon bowl, beat the chocolate, egg yolks, and vanilla lightly.

3. Beat the milk and 1/2 cup of butter into the egg mixture.

4. Fold flour mixture into egg mixture.

5. Stir until combined yet slightly lumpy

6. In small bowl, beat egg whites until stiff peaks form.

7. Gently fold egg whites into batter, leaving little fluffs of egg whites.

8. Use 1 cup batter per waffle.

Sauce:

1. Melt 5 tbsp butter in a skillet over medium heat.

2. Add sugar, stirring constantly until it dissolves, about 1 minute.

3. Add raspberries and cook, stirring, 2-3 minutes.

4. Remove from heat; add orange liquer.

5. Flame liquer and continue to cook for 1 minute.

Serve waffles with the raspberry syrup and whipped cream; garnish with confectioner's sugar.
