Meal: Chicken and Apple Curry

Ingredients

2 chicken breasts, halved

6 tbsp olive oil

1 large onion, sliced

1 tbsp curry powder

1 large carrot, chopped

1 celery stalk, sliced

14 oz coconut cream

1 cup chicken stock

2 green apples, chopped

1 tsp coriander

1/2 cup roasted peanuts (optional)

Directions

1. Heat 2 tbsp oil in large, deep skillet over medium-high heat.

2. Add chicken breasts; brown on both sides, about 3.5 minutes per side.

3. Remove chicken to platter and reserve.

4. Reduce heat to medium; add remaining oil to skillet and heat.

5. Add onion and curry powder to skillet.

6. Cook, stirring frequently, for 3 minutes or until soft.

7. Return chicken to skillet and increase heat to medium-high.

8. Add carrot, celery, coconut cream, and stock; bring to boil.

9. Reduce heat to simmer; cook, covered, 30 minutes.

10. Add apple and coriander and mix in.

11. Cook 20 minutes, uncovered, or until chicken is cooked through; stir occasionally.

12. (Optional) sprinkle with roasted peanuts.
