Slow Cooker: Hearty Chicken Chili

Ingredients

1 medium onion, finely chopped

1 small jalapeno pepper, minced

1 garlic clove, minced

1 1/2 tsp chili powder

3/4 tsp salt

1/2 tsp ground cumin

1/2 tsp dried oregano

1/2 tsp black pepper

4 chicken breasts, cut into .5" - 1" pices

2 cans (15 oz each) hominy, drained

1 can (15 oz) pinto beans, drained

1 cup chicken broth

1 tbsp flour

Shredded cheese to garnish

Directions

1. Combine onion, jalapeno, garlic, chili powder, salt, cumin, oregano, and pepper in slow cooker.

2. Add chicken, hominy, beans, and broth; stir well to combine.

3. Cover and cook on low for 7 hours.

4. Combine 1 tbsp flour and 3 tbsp cooking liquid in a small bowl; add back to slow cooker.

5. Cook on high 10 minutes or until thickened.
