Slow Cooker: Rosemary Cashew Chicken

Ingredients

2 chicken breasts

1 medium onion, thinly sliced

2/3 cup orange juice concentrate

2 tsp dried rosemary, crushed

2 tsp salt

1/4 tsp cayenne pepper

4 tbsp flour

6 tbsp water

1/4 cup chopped cashews

8oz (pre-cooked weight) cooked pasta

Directions

1. Place chicken in slow cooker.

2. Combine onion, orange juice concentrate, rosemary, salt, and cayenne pepper; pour over chicken.

3. Cook on low for 4-5 hours or until juices run clear.

4. Remove chicken and keep warm.

6. In a saucepan, combine water and flour until smooth, unheated.

7. Stir in cooking juices from slow cooker.

8. Bring to boil; cook and stir for 3 minutes or until thickened.

9. Stir in cashews.

10. Serve chicken over pasta; pour sauce over top.
