Meal: Thai-style Corn Soup

Ingredients

1/2 tsp sunflower oil

2 scallions, thinly sliced

1 garlic clove, crushed

2 1/2 cups chicken stock

15 oz creamed corn

1 1/4 cup cooked, peeled shrimp

1 tsp chili sauce (optional)

salt and pepper

cilantro leaves (garnish)

Directions

1. Heat oil in a large, heavy saucepan over medium heat.

2. Saute scallions and garlic until softened.

3. Stir in chicken stock, creamed corn, shrimp, and chili sauce.

4. Bring soup to boil, stirring occasionally.

5. Season with salt and pepper.

6. Serve, garnished with cilantro leaves.
