Slow Cooker: Fresh Pumpkin Soup

Ingredients
8 cups chopped fresh pumpkin
4 cups chicken broth
3 small apples, peeled and chopped
1 medium onion, chopped
2 tbsp lemon juice
2 tbsp minced gingerroot
2 garlic cloves, minced
1/2 tsp salt
Directions
1. In a slower cooker, combine all ingredients.
2. Cover and cook on low 8-10 hours or until pumpkin and apples are tender.
3. Allow mixture to cool slightly; process in batches in a blender or food processor.
4. Transfer to large saucepan; heat through.
