Meal: Chicken-Cheese Chowder (sweet potato stew)

Ingredients
2 tbsp butter
1 small onion, finely chopped
1 1/2 tsp ground cumin
2 chicken breasts, diced
2 large sweet potatoes, peeled and diced
15 oz chicken broth
1/2 cup whipping cream
2 tsp chili powder
1/4 tsp salt
16 oz creamed corn
1 cup shredded Monterey Jack cheese
chopped cilantro (garnish)
Directions
1. Melt butter in a Dutch oven over medium heat.
2. Cook onion, cumin, and chicken in butter 8-10 minutes, stirring occasionally, until chicken is no longer pink in center.
3. Stir in sweet potatoes and broth.
4. Heat to boiling; reduce heat to low.
5. Cover and simmer 8 minutes or until potatoes are tender.
6. Stir in remaining ingredients except cheese and cilantro; cook until hot but not boiling.
7. Gradually stir in cheese just until melted.
8. Serve, sprinkled with cilantro.
